Let's Start
INGREDIENT:-
2 Cups - Maida(All Purpose Flour or refined flour)
1 Tsp - Salt
2 Tbsp - Ghee
1/2 Cup - Water
3 Tbsp - Oil
1 Cup - Jaggery (Bellam or Gud)
PROCEDURE:-
In A Bowl Add 2 Cups of Maida ,1 Tsp-Salt,2 Tbsp-Ghee And 1/2 Cup- Water And Make A Tough Dough
Add 3 Tbsp-Oil And Again Mix Well & Marinate For 30 - Minutes
Kaja Shape Preparation:
Divide The Dough Into Small BallsNow Make A Thin Chapathi And Grease The Ghee & Sprinkle Maida Flour,Keep A Side
Take Another Dough Make The Chapathi And Place on First Chapathi, Grease The Ghee & Sprinkle
Maida Flour. Like Layers of Chapathi
Now Repeat The Same Process For 5 More Chapati's(Tortilla)
The Five Layered Chapathi is ready..Now Roll this Layer's of chapati's
and cut into small pieces
Now Take cutted pieces & gently press with Roller, In a Kaja shape
Process of Jaggery Syrup:
In a Other panTake 1 Cup - Grated Jaggery and Add 1 - Cup Water
Stir Continuously to melt Jaggery in Water, in Medium Flame
In this Jaggery Water Add 1 Tsp - Cardamom Powder & Again Stir for 10 - Minutes,
Now Half Consistency Jaggery Syrup is Ready
Turn off flame
Deep Fry of Kaja:
Take Oil for Deep fry in a pan , Keep Flame in MediumNow Add & Fry Prepared Kaja's in Oil, Stir Occasionally and fry until turns Golden & Crispy, Now
Dip fried Kaja's to Prepared Jaggery syrup and Leave them to soak jaggery syrup for 2 - Minutes
Now Juicy Jaggery Kaja is Ready To Taste
